About Producer

Founded in 1844 by Christopher and Mary Penfold from plantings of vine cuttings they had carried away on their voyage over to Australia, the Penfolds we now today owes much to the vision and innovation of Max Schubert, the house first chief winemaker from 1948 to 1975. A larger than life character, Max Schubert did propel Penfolds to global stage thanks to the creation of a range of iconic wines. Today, the winemaking team headed by Peter Gago are working wonders to maintain Penfolds' standing among the world top elite wineries.

Cabernet sauvignon. Aged for 18 months in American oak, 100% new.

About Appellation

A stellar exemplar of the Penfolds cabernet sauvignon ‘house style’, Bin 707 was first released in 1964, and is only produced when fruit of the required style and quality is available. The wine is named after the Boeing 707 jet, which was the first commercial aircraft to fly to Australia. Grapes are sourced from McLaren Vale, Coonawarra, Barossa Valley and Padthaway. Though yields were smaller, cabernet sauvignon quality was top-notch in 2019 thanks to a cool spring with little rainfall and a combination of hot summer temperatures in Barossa Valley and McLaren Vale with cool oceanic weather of Coonawarra and Padthaway.

Tasting Notes

Alluring nose of dark fruits, cedar, cigar box, black olive, coffee, graphite and violets, dense mouthfeel with plush texture, broad structure and remarkable depth, multilayered flavours of blackcurrant, mulberry, plum preserve, roasted chestnut, mocha, mint, hints of cinnamon and mustard seed liberally laced with savoury iodine notes, well-knit acidity and dusty tannins leading onto a long, mineral finish. Having just turned the corner towards drinkability, this is a sensational wine with assertive elegance, ebullient vigour and beguiling complexity. It’s rich, substantial and vivacious, yet everything is held in impeccable balance with astonishing purity of fruit and outstanding precision. Cloaking its controlled power in lush succulence and irresistible charm, this is undeniably one of Australia’s finest cabernets. (04/2024)
